Cauliflower Rice Poke Bowl
Cauliflower Rice
Ingredients:
- About ½ of a cauliflower (put pieces into a food processor and use grater to chop it into little pieces until it looks about the same size as pieces of rice)
- ½ cup onion, diced
- 3-4 garlic cloves, minced
- ½ cup frozen peas
- ½ cup carrots, thinly sliced
- 2 tablespoons soya sauce
Instructions:
- Heat pan to medium/high (spray with cooking spray 0 cal)
- In a large pan, sauté garlic and onions till they become soft
- Add in peas and carrots, cook until they become soft
- Add in cauliflower and soya sauce
- Stir and let cook until soft
Weigh your portion and use it as a base for poke bowl, or as a side dish for your meal! (Easy way to eat your vegetables and tastes like a carb)
Poke bowl:
Ingredients:
- Sushi grade raw salmon (sushi salmon)
- Diced cucumber
- Diced onion
- Diced green onion
- Sliced avocado
- Sliced mango
- Seaweed strips
- Sesame seeds
Instructions:
- Put cauliflower rice into a bowl
- Slice up salmon
- Add salmon, cucumber, onion, green onion, avocado, mango and seaweed strips on top of cauliflower rice as seen in picture.
- Add sesame seeds if wanted
- Add Soya sauce if wanted
