Cauliflower Rice Poke Bowl

Cauliflower Rice


  • About ½ of a cauliflower (put pieces into a food processor and use grater to chop it into little pieces until it looks about the same size as pieces of rice)
  • ½ cup onion, diced
  • 3-4 garlic cloves, minced
  • ½ cup frozen peas
  • ½ cup carrots, thinly sliced
  • 2 tablespoons soya sauce


  • Heat pan to medium/high (spray with cooking spray 0 cal)
  • In a large pan, sauté garlic and onions till they become soft
  • Add in peas and carrots, cook until they become soft
  • Add in cauliflower and soya sauce
  • Stir and let cook until soft

Weigh your portion and use it as a base for poke bowl, or as a side dish for your meal! (Easy way to eat your vegetables and tastes like a carb)


Poke bowl:


  • Sushi grade raw salmon (sushi salmon)
  • Diced cucumber
  • Diced onion
  • Diced green onion
  • Sliced avocado
  • Sliced mango
  • Seaweed strips
  • Sesame seeds


  • Put cauliflower rice into a bowl
  • Slice up salmon
  • Add salmon, cucumber, onion, green onion, avocado, mango and seaweed strips on top of cauliflower rice as seen in picture.
  • Add sesame seeds if wanted
  • Add Soya sauce if wanted
